In 2024, I decided not to renew my practising certificate as a lawyer. After three decades, I had a thirst for change — something hands-on and creative, that would let me keep learning every single day.
I turned to distilling. It felt perfect. My research skills carried over — but instead of legislation and contracts, I was buried in distilling manuals, botanical texts, and flavour chemistry. And I’ve always had a love of plants. Long before we were a family of lawyers, earlier generations of my family were farmers, so getting back to working with fruit, herbs, and botanicals was in the blood.

Distilling wasn’t a sudden pivot, but the natural outcome of many threads weaving together. I’d always had a love of plants and a curiosity about how much flavour and character could be coaxed from my home garden. My family were farmers long before we were lawyers, so working with fruit, herbs, and botanicals felt like a return to something deeper in the blood.
A visit to my extended family in Barcelona — where they run vineyards and a wine operation — sealed the idea. It was proof that land, plants, and people could be brought together into something lasting and beautiful.
So instead of contracts and legislation, I immersed myself in distilling manuals, botanical texts, and the chemistry of flavour. Every batch is a chance to learn, experiment, and refine. For me, distilling is the perfect mix: science, creativity, and a deep respect for the plants that make it possible.
Every batch is an experiment: proofing down spirits, testing botanicals, tweaking recipes, and chasing balance. The beauty of a small distillery is that there is room for trial and error, and a bit of stubborn creativity.
