Cucumber Gin

Built on a lighter version of our Maroochy Dry base, then handed over to cucumber. The fruit runs through the vapour basket rather than the pot, so what carries into the spirit is the fresh green top note of a just-cut cucumber, not anything stewed or pickled. Juniper is deliberately dialled back. This one is about the cucumber.

Nose
Cool and green, unmistakably cucumber — freshly sliced rather than preserved — with the softened juniper of the Maroochy Dry base sitting behind it.

Palate
Where most cucumber gins stop at the aroma, this one carries through. The cucumber is properly present on the palate: crisp, watery-fresh and clean, with a light citrus lift and just enough juniper structure to keep it honest as a gin.

Finish
Refreshing and dry, the cucumber lingering well after the spirit has gone.

Made for a martini. Be warned that the botanical load is high enough that it will not stay perfectly clear — it louches to a mother-of-pearl pale blue the moment it meets ice. We think that is a small price for a genuine hit of fresh cucumber. Also excellent with a light tonic and a ribbon of cucumber in place of citrus.
